Rotis is a favourite for many people. It is one of those things people really enjoy but not many people know how easy it is to make.
3 cups of cake flour
half a teaspoon of salt
2 tablespoons of oil
1 cup of lukewarm water
70 grams of butter ( I use Marvello butter)
Mix all the ingredients, except the butter, in a bowl until a soft dough is formed. Knead for about one minute. If it’s too sticky add a tablespoon or two of flour.
Break off pieces of the dough and make small balls, I normally get 6 balls.
On a flat lightly oiled surface, roll out the balls to form discs the size of a dinner plate.
Smear a thin layer of butter on the discs and roll it up to form the shape of a sausage. Pick it up on both ends and knock it against the table top for three to five times. Roll both ends to the middle to make a S-shape and put the one side on top of the other.
Put the balls in a plate and put it in the fridge for about 2 hours.
On a flat lightly oiled surface, roll out the balls to form discs again. Make sure each one is very thin. Fry it at a low temperature pan, a minute on each side.
Take it out and fold it in half, then in quarters. Give it a quick rub then open and serve.
Rotis go with many dishes. People normally serve it with curry or butter chicken, but now people use it as wraps for chicken -and chips or masala steak.
